When Olga inherited Finca San Florencio from her father Egidio in 1981, she converted the farm from sugarcane to coffee. Now, instead of equipment to process sugarcane into crystalized panela, the farm has fermentation tanks, canals, and patios to wash and dry coffee.
Olga grows coffee under the shade of the chalun tree on her farm, paying careful attention to the natural biodiversity of Aldea Las Barrancas (outside Xela). She also places a special focus on social well-being, not only hiring her neighbors to work on the farm but also providing agricultural training workshops.
